I made our “big meal” for lunch again and made spicy chicken burgers with chipotle cheddar, sauteed mushrooms, caramelized onions and last tiny bit of bacon we had in the fridge. Ground chicken can be so bland but I think I’ve really gotten good at using it. The trick is to season it liberally and then since it is so light, you can add some heartier toppings to it without it seeming too heavy. I don’t always go quite so crazy and have cheese and bacon but a nice aioli, avocado or a slaw is very good. The more layers of flavor the better. I served it with a bagged salad (last one!).
For dinner we just had some odds and ends. Matt had grilled cheese and canned soup, I had some crackers with cream cheese then some tortilla chips and salsa.
No idea what we are having to eat tomorrow! It depends on how peppy I’m feeling. I have some ideas but they are all rather labor-intensive.

I completed my kitchen in Animal Crossing. I wish it was my real kitchen.
I listened to Let’s Talk about Sects some more.
I finished an ARC of The Girl from Widow Hills by Megan Miranda.
We watched some more French mysteries on Mhz. I never realized how many French cities were on the water. Did we go to the only landlocked one?
