Day 89: Baked Chicken & “Breakfast Tacos”

At lunch time I baked some boneless, skinless chicken thighs with hot and spicy breadcrumbs I had bought early in the year. I roasted radishes, Hakurei turnips, red onion and zucchini. We had the rest of the potato salad I made on Sunday. It was all really tasty and not too much work!

Matt stopped work on time today and made us each 2 breakfast tacos with bacon, leftover boiled potatoes from Sunday, scrambled eggs, cheese and mushrooms from the produce box that arrived today.

Our produce boxes are slowing getting into the season when they are very good! I normally don’t get them as early in the year as I did this year because not much is in season until June here. I thought it would be a good idea to start getting the boxes early just in case they start limited who got boxes as the pandemic went on. I know they aren’t adding new customers. It’s great getting delivery but it isn’t cheap and there were a lot of weeks of just kale, onions, potatoes etc that I could get much cheaper else where. This week was still kale but also some crazy rainbow chard, peaches, bok choy, mushrooms, apples, garlic scapes and spinach.

That chard barely fits in the fridge.

I was talking about maybe going back to the store next week and then I realized it will be three weeks tomorrow since I last went! No wonder we were getting low on a few things. I had been thinking it had only been 2 weeks. Time is so weird now and it didn’t help that Matt worked a lot of the weekend. Today doesn’t seem like it is only Tuesday.

Non-food related activities:

Started a new podcast but don’t know if I am going to keep going with it.

Watched some of At Home with the Braithwaites which we watched years ago but the last two seasons were never available here. I noticed them on Prime so I’m rewatching what we saw and look forward to the “new” episodes.

We watched an episode of A Touch of Cloth. We tried a new show, Sticks and Stones (or The Man, apparently) on Britbox but reviews said it was the most uncomfortable and stressful show ever so Matt didn’t think he could handle it. He can’t handle the awkward situation shows! I might watch it myself one day.
