For dinner I made a beluga lentil salad (using a package of par-boiled lentils from Target) with the rainbow chard from our produce box and some garlic scapes. I had some (baked, obvi) frozen breaded shrimp on the side and Matt had some noodles and cottage cheese.
We have some salad left so I think we will have that with something tomorrow. We don’t have a lot of meat left in the fridge and it’s hot and sticky out so I’m trying to stretch stuff out as much as I can and do minimal effort cooking. We don’t have central air conditioning and the house gets really hot when we cook.
Non-food related activities:
We started The Leftovers (Netflix DVD) and are on the fence. So many dog killings and I’m not that invested in anyone yet.
So much is going on in the world that it’s hard to concentrate on anything.
Hogan is opening up things further next Friday. He’s so awful. He says he doesn’t feel safe eating inside restaurants because he is old and had cancer but it’s fine to make those people go back to work to serve him on the patio. It’s sick. I don’t understand why more people aren’t enraged the government isn’t doing everything it can to keep us home and safe. Especially since it is disproportionally effecting Black people and people are finally coming around to being against the police and unfair workplace situations like the latest Bon Appetite debacle. I guess it’s okay if they die as long as you get your haircut and they watch your kids and serve you dinner?
