Day 173: Pulled Pork & Ravioli

The dogs have been enjoying fake bunk beds today.

For lunch I had leftover pulled pork and succotash salad. Matt didn’t feel well so he had rice and eggs.

I picked up my contacts (they seem okay!) and some masks for my dad.

For dinner I had some frozen ravioli and Matt had noodles and cottage cheese.

I’m exhausted. I had a headache and took a short nap.

Day 172: Fish Stick Sandwiches & Barbecue Spaghetti

For lunch we had fish stick sandwiches with homemade tartar sauce and leftover potato salad.

For dinner Matt made barbecue spaghetti. We still have a ton of pulled pork left!

Non-food related activities:

We watched The Last Resort and Mucho Mucho Amor: The Legend of Walter Mercado on Netflix.

Set up some stuff for my mom.

Matt took Lulu for a long walk and Mitzi and I played in the yard.

Day 168: leftovers & quesadillas

Today I planned leftover red rice and squash for lunch and put up pork for quesadillas in the slow cooker before I went to Aldi for the big grocery shop.

Good thing I did because the hospital called while I was there and I was able to see my mom in the hospital today and we set up hospice. It looks like she might be home tomorrow!

I had a few bites of lunch and had to leave.

I spent the day setting everything up and Matt made quesadillas with portobello mushrooms and the pork. Then we finished Mr Robot.

I’m exhausted, just grocery shopping is a lot right now and then it was the hospital (the only one in the area that allows visitors!) and calls to get a hospital bed delivered and a long meeting at the hospital.

I’m not sure what we are doing for food tomorrow at all. There is a tiny bit of pork left and I’m going to my parents’ for her arrival so I don’t know when I’d be home.

Day 166: Pizza & Steak, Red Rice and Squash

Today was exhausting. I started off trying to get replacement glasses for the funhouse mirror ones that I just bought and that was an ordeal. Now I’m waiting for the tech to order some different frames to try with new lens so that’s going to drag on.

Then I went to get a flu shot at Safeway and while there my contact went to the wrong part of my eye. I didn’t have any way to wash my hands so I had to check out and go home with one eye shut.

I came home and we had leftover pizza for lunch.

Then the rehab called and said my mom was breathing funny and they sent her to the hospital. They never called to tell me which hospital so Matt tracked her down. Then when I talked to the nurse they said she was breathing fine and that she didn’t seem to have pneumonia? I don’t know what is going on with the rehab at all. It’s a strange place filled with disorganized people.

For dinner, I made red rice and a patty pan squash casserole. They bake for about the same amount of time so that was nice! Matt made steak. Now we can have leftovers of the sides for lunch tomorrow if we want.

Day 165: BLTs & Pizza

For lunch we had BLTs with a yellow tomato.

For dinner Matt made pizza. He followed the instructions in the book for the first time and used less yeast and they came out pretty flat. Still tasty though! We used kalamata olives, sopresseta and capicola for toppings and mozz, parm and aged provolone for the cheese!

I’m a bit worried about our salt intake but I figure it has to be lower overall then when we were getting food at/from restaurants before. I’m trying not to dip into our freezer stash so when it’s been a bit since I’ve been to the store (it’s been almost 3 weeks) so I’m limited to what has better expiration dates and we have left.

Non-food related activities:

Got some reading done.

Started the final season of Mr. Robot (Netflix DVD). I can’t believe they killed off the blond muppet looking one so early on!

Trying to tire out the puppy is a full time job. Tomorrow we are going to crate her while Matt works and I return my new glasses and get a flu shot. I want her to be comfortable in the crate now so it isn’t a big deal when we leave in the future.

The people at my mom’s rehab are driving me nuts. They are acting like it’s a big deal about her paper work but they waited a week to email it to me from a nonfunctioning email address, requiring me to call them twice before they said to mail it in. Now the same guy called whining about it and asked if I could email it to him. No, it’s in the mail! I don’t have it anymore. Plus they called my brother about someone at the rehab when he is not their contact about someone having Covid 19 and he didn’t tell us until I emailed him about mom having pneumonia. I’m really exhausted about all this.
