Day 167: Red Rice, Squash & Tamales

Today we had leftover red rice & squash casserole for lunch. For dinner we had the tamales I bought at Aldi awhile back (surprisingly good) and sautéed Swiss chard.

I spent most of the day trying to renew my mom’s health insurance and talking to social workers about her going home and setting up palliative/hospice care. I’m exhausted.

We did watch some Mr Robot. One disc left!
