Day 262: Pancakes & Pork Chops

For brunch we finally made some legit fluffy pancakes! We also made some homemade chicken breakfast sausage. It was a good use of ground chicken! Ground chicken always has good expiration dates and is very affordable so I tend to get it when they have it but it requires some work to be tasty. Finding something to make with it that doesn’t require flatbread or rolls is always a bonus.

For dinner we had pork chops, broccoli and wild rice pilaf.

We signed up for a free trial of HBO Max and have been plowing through Lovecraft Country. The fake blood budget must have been astronomical.
