Day 326: Crumpets & Greens

Matt made crumpets and for some reason did not put our homemade clotted cream on them! I thought that was why we decided to make them but apparently he didn’t get the memo. They were really easy and tasty so I am sure we will make them again.

I bought a smallish boneless ham in our last Weis delivery and Matt made greens with it and potatoes. We didn’t have collards so he did red kale and rainbow chard. It was really good and made a lot! He made ham sandwiches too.

It snowed!! We watched some Great British Menu from like 10 years ago. The puppy loves the snow, thankfully!

Day 325: Cauliflower & Hot Dogs

For lunch we had leftover gumbo.

For dinner we hat hot dogs and I made this cauliflower crouton dish (the recipe is for Patreon subscribers if you are interested!) that was really good and used up leftover bread from last weekend and a cauliflower that has been taking up a lot of room in our fridge.

We finished the Repair Shop (why is there only one season out of like 8 available on Netflix?) and caught up on Discovery of Witches (Sundance) and read. Not too exciting. I still didn’t feel great after my migraine(s) earlier in the week.

It’s supposed to snow tomorrow! Matt dropped off my books at the library book drop just in case its gross next week and I can’t get them back. Our library doesn’t have a parking lot (city life!) so it is treacherous when it snows, they don’t shovel or salt very well even when the library is open normally and sometimes I have to park blocks away. No one wants to break an ankle returning library books, especially during a pandemic!

Day 324: Nargisi Kofta Curry

For lunch we had fish stick sandwiches with homemade tartar sauce. We also had a cheese (good, Spanish) and Scottish oatcake (not good) snack. I’m not sure if we have any more fish sticks left! The wild caught Aldi ones are really good.

Matt took off work because he has to work a little tomorrow so he made nargisi kofta which is basically a spicy lamb scotch egg in a yogurt-tomato curry sauce. Very tasty but rich! We have enough for it to be a whole other dinner leftover. One of his old coworkers raved about a restaurant in New Jersey that served only “egg based cuisine” and we thought of him. What other Indian egg dishes are out there?

Honestly we took a big nap during the day and read. Then we watched a little more of the Repair Shop and One Night in Miami (Prime) which was good. So many actors we like in other things were in it! And yay Regina King.

Day 323: Gumbo

For lunch I had more minestrone! Boy did that make a lot. It was good but three days in a row is a lot.

For dinner Matt made gumbo with a mix from A Cajun Life. They had sent me some items to try a long time ago and we came across a few boxes in the pantry. I was skeptical of a gumbo mix but it was tasty! It really had some depth of flavor. He used up the chicken leftover from yesterday in it.

I bought a yarn winder and swift and have been rolling years worth of yarn while we watched The Repair Shop on Netflix. I feel like an old lol. It works remarkably well even though I didn’t buy the top of the line wooden ones. It’s so quick!

I had another migraine so ended up going to bed early but did teach myself a new technique on the loom!

Day 322: Roasted Chicken

For lunch we had leftover minestrone soup. Then for dinner Matt spatchcocked a chicken and surrounded it with turnips, carrots and potatoes. So much chicken is leftover!

We watched Zooey on Hulu and some of the Repair Shop on Netflix. It was a long rough day. I didn’t feel great, the dogs were nuts all day, it was just one thing after another .

Day 320: Spaghetti Squash Orzo

For lunch I made orzo with spaghetti squash, olives, halloumi and a bunch of other tasty bits. Then for dinner Matt had some shrimp with rice and mushrooms and I had some shrimp with cocktail sauce and some leftover egg rolls.

We watched All Creatures Great and Small. It’s not relaxing if they have to euthanize a horse! Watched a little more of the glass blowing.

I finished up a weaving and my yarn order finally arrived. It was missing some yarn. Not ordering from there again.

Day 319: Clotted Cream Shortbread

Matt made clotted cream in the instant pot and made clotted cream shortbread. So we kept food simple—leftover pizza for lunch then dinner was English muffin bread he made in the bread machine, clotted cream (plain and with tangerine zest) and lemon curd our friend made and shared with us.

We watched some of the glass blowing show on Netflix and it is so low budget. The hosts are so bad.

Day 318: Egg Rolls

For lunch we had noodles and fried eggs s For a big snack we made egg rolls for a contest I want to enter.

And Matt made clotted cream in the instant pot.

For dinner we some Aldi “Red Bag” chicken filets in naan, leftover butternut squash and another egg roll.

We watched the glassblowing show on Netflix and it is a pale comparison to GBBO and the pottery show.

Day 317: Pizza!

For lunch I made popcorn. We haven’t made huge dinners so haven’t had much leftovers to deal with. Later I made some mi goreng and shredded some zucchini in it.

Matt made pizza with pepperoni, rapini and red onion. It didn’t rise as much as we thought. He switched to the recipe that called for 00 flour because we’ve been using pizza flour from King Arthur but I think we might switch back to the recipe we were using before that called for bread flour and keep using the pizza flour. It was still tasty though!! Just small and not as risen.

We watched a odd Russell Tovey show The Sister on Hulu. He is not behaving in a way that makes sense which is frustrating! I recently watched Years and Years on HBO Max while weaving and he was so good in it, it’s annoying to see him play someone so frustrating.
