I’m Rachel Rappaport. I’ve been blogging my original recipes on Coconut & Lime since 2004. I’m also a huge Aldi fan. I’ve written several cookbooks and really enjoy meal planning, using up leftovers in creative ways and saving money. My dream is to write a cookbook of tinned seafood recipes but so far, no publishers have showed any interest. Which is a shame because I think it would come in handy for a lot of people right around now!
I’ve always been interested in pandemics, my grandpop was four during the flu of 1918 and while Baltimore was hit hard and his father got sick, his whole family pulled through. While I hoped I personally would never live through a pandemic, I’ve always followed them closely and once I saw what was going on with Coronavirus disease (COVID-19) overseas I started picking up extra food on my usual shopping trips. I generally have a pretty well stocked pantry of basics since I develop recipes for a living but I doubled up on canned beans and tomatoes, tinned seafood, dried pasta, picked up extra flour and sugar and started buying meat by what had the furthest expiration date.
My goal is to stay healthy, avoid infecting others and pass this time of self-isolation by making tasty food. I already work at home as a recipe developer and my husband has been told to work from home for the foreseeable future. It will be just the two of us and our pughuahua in our home in Baltimore City, Md trying to make the most of things.
