Day 271: Norwegian Plukkfisk & Kimbap

It was quite and international day here! For lunch I made our main meal, Norwegian Plukkfisk (Patreon recipe) which was really cozy! Maximum hygge for the one of the coldest days this fall.

Then for dinner Matt made kimbap with burdock root, pickled radish, cucumber, carrot and leftover ham. So good!! It was one of those boneless whole hams so it was the perfect thickness and we could cut long strips out of it. I hope Aldi has more when I go there Wednesday. The burdock and radish have lasted forever in the fridge. Kimbap is such a great light meal. Matt also bought 100 sheets of gim back in the spring so it is good to work on that.

I ordered a loom and a ebook with videos today. I really don’t feel like sewing (I really feel like we have some electricity issues I want to have checked out. We are running a lot with Matt working from home now) and embroidery is okay but slow going and I really don’t feel like my contacts prescription is quite sharp enough. I think I at 20/25 and I’m finding myself getting tired doing fine work like that. Anyway, I ordered a frame loom and thought I’d make some free form tapestry type things. Why not?

We watched some Miss Sherlock on HBO Max. I like the food scenes. Lots of eating even when it isn’t part of the plot.

We normally do a movie and food themed marathon each year for New Years Eve. I think we are going to do end of the world/apocalypse and make rationing food. I think it will work because I don’t know if I’ll be shopping for food then like I normally go.

Day 268: Fried Rice

For lunch we just had canned soup. We are in the dredges with fresh groceries. It’s been about three weeks and the last trip involved Thanksgiving so I wasn’t able to get as much as usual due to space concerns surrounding the turkey. I’m debating going shopping next week, we have a lot in the freezer but are getting low with milk and eggs and fresh meat/produce. The virus is up since when I went but the positivity rate is like 8% vs 7% which doesn’t seem horrible and will mostly likely only go up closer to Christmas. At this point next week, it would have been two weeks post Thanksgiving so hopefully people would either be well or staying home if sick or past the real infection already stage.

It’s really difficult to know what to do! I do wonder if I’d regret not going and then really getting down to just freezer food if it’s too bad to shop in late December.

For dinner we had fried rice with leftover ham from making the soup. So good! I was starving, a can of soup is not a full lunch!

We watched more Gentleman Jack. Matt’s on call so he’s had extra work to do.

Day 259: Schnitzel & Fried Smoked Oyster Rice Dressing

I ran to the post office in the morning then came home and made a quick fried rice when the leftover oyster rice dressing and turkey.

For dinner Matt made schnitzel, heated up the leftover mashed potatoes and made some Swiss chard and mushrooms. The thin pork chops were sell by Friday so we had to get them done! We also cooked up the steelhead trout which also was sell by Friday. We will make trout salad for our lunch tomorrow.

We watched Good Morning Vietnam on Netflix DVD. I hadn’t seen it before.

Day 258: Turkey Empanadas

For lunch I made chipotle turkey acorn squash empanadas with leftover turkey. Highly recommend!

For dinner we had some mortadella sandwiches. Matt made a run to the Italian store for Thanksgiving supplies and got the ingredients.

I spent a long time at the bank doing paperwork. It was all though the drive thru so I’m glad it wasn’t very cold!

We caught up on Death in Paradise and Fargo.

Day 257: More Turkey

For lunch I heated up leftover chicken from Saturday and the cauliflower from Sunday and mixed it in some mi goreng. It turned out great!

I spend most of the day on the phone with various people about my mom’s estate so we just had turkey sandwiches for dinner.

In the morning I went to my dad’s to drop off his dinner for Thursday and he gave me my mom’s old milkshake maker.

We watched The Truman Show (Netflix dvd) and an episode of Fargo (Hulu).

Day 254: Meatloaf & Thrown together sandwiches

For lunch I made us sandwiches with flat bread, leftover chicken tenders, the dregs of a container of feta, Trader Joe’s garlic spread, cherry tomatoes (from October!), cucumber and the lettuce leftover from the salads yesterday.

For dinner I made meatloaf and we had baked potatoes stuffed with sautéed spinach.

The roofers were still here most of the day but it’s done now and looks good! We picked blue shingles which looks nice.

I went to Weis and picked up some odds and ends that I can’t get at Aldi. Mostly canned soup, pasta, bricks of cheddar, bread and cottage cheese. Here’s hoping we don’t have to shop any time soon! The freezer is packed so we should be in good shape if things get really bad and we don’t want to go out at all.

We started the Crown. I’m sad my mom didn’t get to see this season, it’s getting to a time when she’d really remember and she wasn’t much older than Diana.

Day 252: Leftovers (again)

For lunch I heated up the leftover home fries and bologna and fried an egg.

Dinner was pav bhaji without the pav and just on rice. It was still very good! I think we will make it again.

We watched Death in Paradise on Britbox. Would it kill to them to swap in a detective who isn’t a white guy?

The roofers were supposed be back but the team was awaiting Covid results (eep! Joel they are okay) so they are sending another team tomorrow. Hopefully it won’t be too loud!! I sort of planned the day and our meals for yesterday and today thinking they’d be here and noisy. It did end up being noisy because our neighbor is having work done but it ended being a fairly chill day. I just want it done so I never have to hear the word “soffit” again.
