Day 422: Corned Beef

For lunch we had leftover tuna pasta salad.

I bought a corned beef back in March I think that was sell by May 11th and has been in our fridge all that time! It’s still perfectly good so I popped it in the slow cooker and we had it with salad and some German sourdough rye I bought at Lidl and some pastéis de nata for dessert. The Lidl version aren’t as great as the one we had in Belem where they were invented but they are pretty good! That’s something that I enjoy but wouldn’t want to make myself unless we were having a party with people I know would love them.

We watched a little Suburban Shootout which we had seen years ago (Ruth Wilson, Tom Ellis and Tom Hiddleston look like babies in it!) and After Hours which just got on my nerves. Netflix DVD really is great for things that aren’t streaming anywhere.

I also finished a present for a friend and mailed it off at the Wockenfuss candy story USPS spot. And bought some candy! That’s how they get you!

I taught myself punch needle today and started a piece.

I keep getting headaches. The stress and construction noise in the neighborhood is getting to me.

Day 421: Chicken Sandwiches

I had to help my dad out in the morning so Matt made tuna pasta salad yesterday for today’s lunch.

I wasn’t sure how long I’d be out so we had Aldi red bag chicken sandwiches with pickles and a bagged salad.

I stopped at Lidl and picked up a bunch of produce and a house plant. I don’t like Lidl as much as Aldi but they do have a great produce department and have things like leeks and fennel.

Day 420: Mango Salad

I made our main meal at lunch—wild rice salad with mango and avocado and trout. So good! I had poached the trout yesterday and the rice was the par-cooked kind so it was quick to throw together.

For dinner Matt had leftover meatballs as a sandwich and I had a small quesadilla with the leftover taco filling.

We watched the last Brokenwood and it was so bad! The rest of the season was really good so I don’t know what happened. None of it made sense.

More weaving! I had a migraine this evening so didn’t do too much of anything.

Day 419: Red Beans & Rice

I had some frozen shrimp for lunch with a can of tomato noodle soup. Dinner was leftover red beans and rice. I think it was actually better the second time! More creamy!

I stopped at the supermarket to pick up some soda and some odds and ends. Do you ever have a day where you drop or break everything? That was today.

We watched Mare of Easttown and The Nevers on HBO Max and I started a weaving for my friend.

Day 418: Longsilog & Tacos

Matt made rice yesterday so he could make garlic fried rice for longsilog today! The sausages got a little brown but they were fine! I think the sweetness in them caramelizes quickly. The sausages defrosted nicely too.

Then we made tacos for dinner. It feels like it’s been a long time since we had tacos but time has no meaning. We used this beef that was labeled as “good for fajitas” but wasn’t sliced?? but was tasty and cooked up quickly.

We watched A Woman’s Face on Netflix DVD. That was an odd one. We also tried Barb and Star Go to… and it was not good. So forced, like they set out to create a cult movie. What a waste and it looked like they filmed it on the set of Jane the Virgin.

Day 417: Bacon Chicken Burgers

For lunch we had some (frozen) dumplings from H Mart. One was more of a large buckwheat wrap? It was all very good.

For dinner we grilled and made bacon chicken burgers and had them with leftover cauliflower salad. We also made some meatballs with the leftover meat (they tend to heat up better than burgers) and grilled some eggplant for a future meal. The eggplant went a little too long but I think it will be okay. Hopefully! They were beautiful eggplants.

We also tried these Cuban sandwich flavored chips. Not bad!

I made a whole weaving on a new small loom I bought on Amazon for like $13. I swear it is the same one I’ve seen people on Etsy selling for $$$. It even came with a heddle bar which was nice. My other small loom didn’t and it’s hard to practice on my bigger looms with it because it takes so much more yarn and time.

We watched Bäckström on Acorn. It is really enjoyable! I don’t know why they aren’t promoting it more. It even has a non-annoying little kid!

Day 416: Red Beans and Rice

Finally made red beans and rice! It’s been on the menu forever but I never got around to making it. I do it in the slow cooker using this recipe (I did sauté the vegetables first because Matt suggested it but I don’t honestly think it made much difference). I ended up with a migraine and Matt is on call so an easy dinner turned out to be a good idea. I used some chicken andouille from the freezer I think was from spring last year! It was fine but I froze some fairly recently so I’m glad I used it up. We have enough leftovers for a whole other meal.

For lunch I had some jajangmyeon from the fancy kind of packet where you get sauce not a mix and shredded some zucchini in it. I should have drained it more but it was still tasty.

Day 415: Cauliflower and Tofu Salad

I went to Aldi in the morning to pick up some produce and odds and ends. It was Mexican food week so I got some ingredients to make tacos when the avocados ripen.

It’s nice going to the store and not feeling like I have to prepare for a week! I got some really nice eggplants I have to figure out something to do with.

I came home and had some canned soup. blah.

I had prepped dinner yesterday so all I had to do was roast the tofu and artichoke hearts and make the orzo.

We watched A Room with a View on HBO Max. I hadn’t seen it before! Helena Botham Carter looked like a baby. I think it was the only thing featured in Gilmore Girls that I hadn’t seen before.

Day 414: Leftover Pizza

For lunch I had some frozen shrimp and Matt had a tuna melt with the leftover tuna on marble rye.

It was hot today! I wanted some hammock time to catch up on my reading but time got away from me and then it was nearly 90. I had a zoom job interview in the afternoon. Of course the dogs had to bark and the office phone had to ring during it.

I prepped tomorrow’s dinner in the afternoon—lots of marinating is needed. I love when I can do meal prep on days when I don’t actually have to make dinner.

We had the leftover pizza for dinner. It was tasty but I think pepperoni and meatballs is too much! The asparagus was good though.

We watched Cruel Summer. I can’t figure out where it is going to go!

We are getting low on produce and milk so I think I might do a grocery run tomorrow. I don’t think I’m going to try to do the mega shops anymore now that I’m fully vaccinated unless something changes.

Day 413: take out

I had leftover tuna for lunch. I didn’t feel well and Matt had meetings all day and into the evening so we ended up getting Thai food for take out. It was pretty good but it seems weird to pay restaurant prices now!

I thought we had some frozen red bag Aldi chicken but we couldn’t find it. A mystery!

It was nice weather so I got to use the hammock at bit!
